By now, the story of the truffle hunter with a hollow face who set off during the night to look for truffles with his faithful dog has become one of the oldest and most beautiful legends: but today it's not only a legend but an important reality.
On the tracks and with the help of his dog the man found the precious tuber (Tuber melanosporum vitt), defined by an authoritative source as being the “black diamond” of the table, with a rough but royal aspect. As far as half a metre under the ground, it grows near oak trees, hornbeams and hazelnuts. The picking season goes from December to March,a period in which black truffles are selected and treated with the most modern technologies behind the shadow of old tradition, protected by the Urbani family for many decades.
The fresh truffles are sent all over the world and they reach even the furthest destinations in perfect condition, thanks to the special freezing containers which keep the product fresh for up to three days.
The base recipe for black truffles is the classical “sauce alla spoletina”, for which the truffles are minced and added to warm, (but not boiling) olive oil, a touch of garlic, salt and pepper, making it ideal for use on canapés, first courses, meat and fish: we advise to cut them in slices for salads.
